Comparing chiffon and polyester
A marketplace shortlist can hold chiffon and polyester at the same time. They are not interchangeable just because both can be cut into apparel.

What chiffon contributes
Chiffon is filed here as sheer woven. One reason to open it is fluid sheer for overlays and occasion dresses. One reason to sample is not a structured garment cloth.
Chiffon pages should be read for construction and weight, not only for the fibre name.
What polyester contributes
Polyester is filed here as synthetic. One reason to open it is often practical for travel and workwear briefs. One reason to sample is heat and finish behaviour should be sampled.
Polyester belongs in the shortlist only when its published construction fits the garment.
How to choose without a winner
Keep chiffon when useful for layered silhouettes is the constraint you cannot drop.
Keep polyester when useful in blends and performance apparel matters more. Leave GSM blank if the fabric page does not publish it.
